Luis’ notes - 2020 Semi-sweet mead

• Bountiful complex notes in the source honey
• Fermented out quickly to 16% abv
• Back-sweetened with Hawaiian coffee honey, imparting subtle chocolate notes to balance the complexity, particularly a hint of Eucalyptus.

Luis’ notes - 2020 Dry mead (on the sweeter side of dry)

• Fermented out to 17% abv
• Cotes des Blanc yeast enhanced the fruity esters and the yeast loved this honey that fermented out more quickly than usual
• Dry meads have some lingering astringency that some new mead drinkers find harsh (depending on what the bees were collecting) but this one was surprising low in astringency
• The source honey was well-rounded, resulting in a milder astringency that blends well with the heat of the higher abv
